Getting my kids to eat their veggies is such a task that I had almost given up hope on them eating anything that looks healthy! Learning how to oven roast veggies has helped, the kids love snacking on them now. It is such a simple way of doing rather than sneaking them into everyday food. The kids have learnt to enjoy vegetables in a wholesome way.
After discovering farmers markets here, oven roasted veggies are my absolute favorite to eat in these cold, dark winter days. It makes including veggies in your daily meals easy, breezy and tasty! The myriad of veggies I have tried roasting are sweet potatoes, butternut squash, broccoli, asparagus, kale chips and the list is endless really, has only helped me push the envelope with what the kids can eat.
Brussels sprouts were a pleasant surprise. I did not expect to like brussels sprouts as much as I did. They absorb the flavor of the vinaigrette so well and the different layers crisp up perfectly too.
I had presoaked chickpeas(brown) in the fridge and thought of pairing it as a last minute addition really but the whole combination worked perfectly. It was filling and really increased the nutritional value of the dish.
Asparagus and Sweet Potatoes
The ingredients for the vinaigrette are:
- 1 lime juice
- 3 times the quantity of lime juice is Olive oil
- Garlic salt
- salt to taste
- Black pepper to taste
- Red chili flakes (I use left over packets after ordering in pizza, they seem to be just enough spicy without over powering the dish)
Procedure:
- Whisk all the ingredients to make a vinegar.
- Remember to half/quarter the veggies so they can mingle with the awesomeness of the vinegar
- Let them marinate for 20 mins at least.
- Preheat the oven to 375 degrees and place the veggies on a baking sheet in the oven for about 10-15 mins, checking on them to make sure they don't burn.
- Let cool on the kitchen counter for another 10mins and enjoy.
Broccoli
Broccoli is another favorite and there is no right or wrong way to oven roast your veggies. Its more like a trial and error depending on how done or undone you would like them to taste. I use the same procedure to bake Salmon too! It tastes finger licking good every single time!
Butternut Squash
We enjoy these veggies as a side with rice, dal and curry or as is as a snack. It is always filling and yummy at the same time! Do give it a try and let me know how you like your veggies.
